Gluten free Cauliflower Pizza

Pizza is one of Dan's favorite foods, but honestly I often give it a miss, mostly because these day it ends up leaving me keeled over with tummy cramps needing a dose of IBS tablets and very hot water bottle. Sadly most doughy bases from favorites like Pizza Express or Dominos just don't agree with me, so when I do fancy a pizza I find this to be such a delicious alternative. This recipe is super easy and honestly still really bloody nice tasting. In fact, Dan tried this and said he could hardly tell the difference. To make this, I adjusted a recipe from BBC good food and one I read from the Londoner  blog and then I kinda winged it, well isn't that the fun in recipes?  If you are interested here is mine below. 

Cauliflower Pizza Base Recipe

What you need:

1 medium cauliflower

25 g of freshly grated parmesan

1/4 of a ball of mozzarella grated

1tsp dried oregano

1 big clove crushed garlic

2 eggs

Pinch of salt & pepper


Tomato pizza sauce 

1/4 ball of mozeralla in slices 

Whatever cheese you have laying around if you like it extra cheesy like me. 

1 big pinch dried oregano

Jar roasted red peppers 

Parma Ham 

Fresh Basil

1. Heat oven to 200C/180C fan/gas 6. Remove stalks, Blitz in a food processor until finely chopped, like rice. Tip in a bowl, cover with cling film and microwave on High for 5-6 mins until softened. 

2. Pop onto a clean tea towel and leave to cool a little. Scrunch up the tea towel and squeeze as much liquid as you can out. Get a bowl, Stir in your eggs, oregano, ΒΌ of mozzarella (I find this helps keep the crust well formed), your cauliflower and plenty of seasoning. Line a baking tray with baking parchment and grease with oil. Mould the mixture into a flat circle 
Bake for 15-18 mins until golden brown and starting to crisp a little at the edges. 

3. Once the cauliflower base is cooked, set aside to cool a little. Turn the oven up to 240C/220C fan/gas 8. Spread the tomato sauce over the base, and chuck on all your chosen toppings and cheese. 
Return to the oven for 10-12 mins. Once done, throw on some more parmesan and your basil leaves and voila, your yummy, crispy cheesy pizza is ready to eat.
